Enter Elana’s Pantry, the creation of eco-entrepreneur and gluten-free guru Elana Amsterdam, whose new book The Gluten-Free Almond Flour Cookbook shares recipes, tools and tips that erase the limitations of gluten-free cooking and baking, and open up a whole new world of culinary possibilities to anyone who loves good food.
When diagnosed with celiac disease in 1997, Amsterdam's top concern was that she would not be able to continue making palatable food for friends and family.
With the same spirit of enthusiasm and creativity that landed her on Crain’s prestigious “40 under 40” list for her industry-changing recycling company, Ecosav, she set out to create an entirely new approach to cooking that would give people with celiac - and their friends and families - new and better options.
Amsterdam developed a gluten free repertoire that includes hundreds of wholesome, delicious recipes using the best ingredients available for healthy eating and homemaking. To document her research and share her discoveries, she started a blog called Elana’s Pantry, now considered a top gluten free online resource.
Elana's Pantry is much more than a resource for gluten-free eating. It turns out that gluten-free recipes utilizing wholesome ingredients such as almond flour, naturally allow people to eat more nutritious, less processed, lower-carbohydrate food. This benefits both people struggling with diabetes, thyroid disease and other health issues as well as athletes in training and those who simply want to have a healthier diet.
“People often ask, ‘Why almond flour?’,” says Amsterdam. "Aside from the fact that it’s gluten free, it’s also highly nutritious. It’s high in protein and low in sugars - which is great for people who need to watch the glycemic index of the foods they eat.”
Because Amsterdam was so amazed by the the gastronomic possibilities offered by almond flour, she chose to make it the centerpiece of her new cookbook The Gluten Free Almond Flour Cookbook published July 2009 by 10 Speed Press.
While the main resource at Elana’s Pantry is healthy, tasty recipes, the site is a goldmine of information about finding products and ingredients, each of which is carefully vetted and tested by the demanding palates of Amsterdam, her husband, sons, and friends.
